Ingredients for making veg dum pulao:
1. Vegetables - available at home
2. Rice - 1/3 kg
3. Onion - 3 large size
4. Tomato - 2 large size
5. Oil - 2 spoon
6. Ginger and garlic paste - 2 tsp
7. Cinnamon - 1 stick
8. Cloves - 12 nos
9. Cardamom - 5 nos
10. Coriander leaves - 1 cup chopped
11. Mint leaves - half cup
12. Brown onion - half cup

Steps of making veg gravy for pulao:
1. first in a small jar add half onion sliced, half tomato sliced,1 garlic peeled, 3tsp chopped ginger, one stick of cinnamon, 12 nos of cloves, 3 cardamom and coriander leaves. By adding little water grind it into a smooth mixture. You can even use the fresh ginger and garlic in grinding process or else you can use 2 tsp of ginger and garlic paste while sauteing the onion.
2. In a large pan add oil, 2 chopped onion and 3 green chilli spilt in two and saute for 2 minutes.

3. Then add garlic and ginger paste and mix it well cook till its raw smell vanish.

4. Then add the vegetables available in your home and saute for 4 to 5 minutes.

5. Then add mint and coriander leaves for a minute and mix it well.

6. Then add the ground mixture and tomato mix it well and cook till the tomato get soft.

7. Then add salt as required, 2 tsp chilli powder and half tsp of Haldi. Mix it well.

8. Then in last add the half cup of peas and cook for 2 minutes and switch off the gas. The gravy for pulao is ready.


Steps of making veg dum pulao:
1. Then in the water, as required to cook the rice, Add the rice which is washed for 2 to 3 times, salt to taste, half stick of cinnamon, 2 cardamom and 4 cloves. Pressure cook rice for 2 whistles so the rice will cook.

2. First in a large vessel add the thick layer of rice, half of the cooked veg gravy and half of the brown onion.

3. Then follow the same and in last add all the remaining rice and brown onion. Seal it and cook in the dum process.

4. For the dum procedure, For cooking this, heat an old Tawa place the biryani pot and dum cook for 20 to 25 minutes on a low flame.

5. Once the biryani is cooked well in dum procedure give it a good mix so all the masala and rice combine together.

6. Serve it hot by side of cucumber raita.
