Chicken Kabsa | Chicken Mandi:
Chicken kabsa is one of the popular dishes of Saudi Arab. It is actually so easy to make and tastes delicious. I have come across this recipe through my friend and tried it and it came so well that thought of sharing this recipe. I have shared an easy way of making chicken kabsa without oven. Chicken kabsa is flavoured rice in spices and chicken leg piece on this flavoured rice. Chicken kabsa is served with tomato chutney. Chicken kabsa with step by step photo and video.

Chicken Kabsa | Chicken Mandi:

Ingredients for making kabsa powder:
1. Bay leaves - 4
2. Cardamom - 5
3. Cloves - 15
4. Cinnamon - 2 inch
5. Black pepper - 1 tsp
6. Coriander seeds - 3 tsp
7. Cumin - 1 tsp
8. Fennel seeds - 1 tsp

Ingredients for marinating chicken:
1. Chicken - half kg leg pieces
2. Ginger and garlic paste - 1 tsp
3. Salt - to taste
4. Chilli powder - 1 tsp
5. Kabsa masala - 1 tsp
6. Lemon - half to squeeze

Ingredients for making kabsa:
1. Oil - 2 spoon
2. Bay leaves - 2 Nos
3. Cloves - 5
4. Cardamom - 2
5. Cinnamon - 2 inch
6. Green chilli - 4 sliced
7. Onion - 2 finely sliced
8. Tomato puree - 1 cup
9. Ginger and garlic paste - 1 tsp
10. Turmeric powder - half tsp
11. Salt - to taste
12. Carrot - 1 cup shredded
13. Kabsa masala - 1 tsp
14. Rice - half kg washed
15. Water - as required

Ingredients for garnish:
1. Brown onion - 1 cup
2. Roasted dry fruits
3. Coriander leaves


Chicken Kabsa | Chicken Mandi:

Steps of making kabsa powder:
1. Heat a pan on high flame and roast all the species like 4 bay leaves, 5 cardamoms, 15 cloves, 2 inch of cinnamon, 3 tsp coriander seeds, 1 tsp black pepper, 1 tsp cumin and 1 tsp fennel seeds.

2. Then after roasting all these spices transform in a small jar and grind in fine powder.

3. Store it in the fridge and whenever you are making kabsa, mandi or biryani you can use it.


Steps of marinating chicken:
1. In a cup add 1 tsp kabsa masala, 1 tsp ginger and garlic paste, salt to taste, 1 tsp chilli powder.

2. Then squeeze half and lemon and add 1 tsp oil and mix it well.

3. Then make cuts on chicken so marination goes in the chicken well. Apply the marination on chicken well and spread all over.

4. Keep this chicken for 2 hours so the chicken gets better marinated.


Steps of making kabsa:
1. In a cooker add 2 spoon of oil, 2 bay leaves, cloves, cinnamon and cardamon. Saute for 1 minute.

2. Then add green chilli sliced and cook for 1 minute till it is soft.

3. Further, add onion and saute till golden brown and becomes soft.

4. Then add ginger and garlic paste, haldi and salt to taste and cook till ginger and garlic raw smell vanishes.

5. Further, add the marinated chicken and cook it from both sides till it becomes white.

6. Then add the tomato puree and 1 tsp of kabsa masala and mix it well and add water and pressure cook for 2 whistles.

7. Then when the chicken is cooked take it out in plate and grill the chicken.

8. To grill, the chicken in a Kadai add 2 tsp of butter and grill the chicken from both sides and take it out in a plate.

9. In the cooker then add 1 cup of shredded carrot and half kg of rice washed and salt as required.

10. Then add water as required and cook this for 2 whistles.

11. When the rice is cooked take it out in a plate and top with grilled chicken.

12. Serve with tomato chutney and garnish with brown onion, coriander leaves and dry fruits.
