Biryani is very commonly prepared in Muslims family at eid and other function times. It doesn't mean that other people don't love it. Biryani is a dish which is loved by every religious person. Biryani invites every community by its aromatic taste.

Chicken Dum Biryani is an epic dish by Mughals nizams. Chicken dum biryani is prepared in 2 types. First is the Kachchi biryani which is also known as 'Hyderabad Dum Biryani'. In Kachchi biryani, the raw chicken is marinated with some ingredients and cooked in the dum process by layering raw chicken with partially cooked rice on slow flame.

Second is the pakki biryani, in this chicken and rice are cooked separately and layered and cook in a dum process for a few minutes. So in this post, am sharing the second method that is pakki biryani. This chicken dum biryani is very easy to make and taste delicious. So do try it once. Ingredients for marinating chicken:
1. Chicken - half kg
2. Curd - half cup
3. Chilli powder - half tsp
4. Ginger and garlic paste - half tsp
5. Garam masala - half tsp
6. Salt - to taste

Ingredients for fried golden brown onion:
1. Oil - 2 spoon
2. Onion - 1 sliced thinly

Ingredients for making chicken gravy for biriyani:
1. Onion - 2 sliced thinly
2. Tomato - 2 chopped
3. Ginger and garlic paste - 2 tsp
4. Cinnamon - 4 inch
5. Cloves - 4
6. Cardamom - 2
7. Potato - 2 small diced
8. Coriander leaves - 1 cup finely chopped
9. Mint leaves - half cup
10. Curd - half cup
11. Chilli powder - 1 tsp
12. Salt - to taste

Ingredients for the preparation of rice:
1. Basmati rice - half kg
2. Salt - 2tsp
3. Cloves - 4
4. Cardamom - 3
5. Cinnamon - 1 inch
6. Oil - 1 tsp
7. Water - 8 to 10 cup

Steps of marinating chicken for gravy:
1. Take a bowl pour a half cup of curd, salt to taste, half tsp chilli powder, half tsp ginger and garlic paste, half tsp garam masala. Mix it well.

2. Next, pour the half kg chicken in it and mix it well.

3. Keep it in the fridge for 1 hour for proper chicken marination.



Steps of fried golden brown onion:
1. In a cooker, add 2 spoons of oil and let it be hot. Saute 1 thinly sliced onion in hot oil.

2. When the onion turns golden brown in colour and crispy take it out in a plate.



Steps of making chicken gravy for biryani:
1. In the same oil in which we fried onion, add 2 thinly sliced onion and now lower the flame cook it for 1 minute.

2. Then add 4-inch cinnamon, 4 cloves and 2 cardamoms. Saute this for a minute.

3. Next, add 2 tsp ginger and garlic paste and cook until its raw smell has gone completely.

4. Next, add the marinated chicken and cook on a medium flame until it turns white.

5. Further, add 2 small potatoes diced and cook it for 2 to 3 minute. So it is coated in the masala.

6. Next, add a half cup of curd, salt to taste and 1 tsp chilli powder. Mix it cook it for 2 to 3 minute.

7. Then add 2 chopped tomato, 1 cup of finely chopped coriander leaves and a half cup of mint leaves. Mix it well and cook for a minute.

8. Then pressure cook this for one whistle till the gravy gets thick. Chicken and potato are completely done.



Steps of cooking rice for biryani:
1. While the gravy is cooking, cook the rice for biryani. Wash rice few times till the water runs clear. Soak the rice for 1 hour. After Drain the water.

2. In a large vessel put 8 to 10 cups of water. Then add 2 tsp salt, 1 inch of cinnamon, 4 cloves, 3 cardamoms and 1 tsp oil. Bring the water to boil for cooking the rice.

3. When the water comes to a boil. Add drained rice.

4. Cook until the rice is 95% done. It means the rice should have the bite and grainy.

5. Next, drain its excess water and take it in a vessel to cool.



Steps of making multi-layered dum biryani:
1. In a pot pour 1 tsp of oil. Then first layer the rice in a pot.

2. Next, add half of the chicken gravy and some fried onion and spread it properly.

3. Repeat the same step again till the chicken gravy and rice are finish.

4. Then in last add the remaining rice on it and fried onion and 1 tsp of garam masala.

5. For cooking this, heat an old Tawa place the biryani pot and dum cook for 20 to 25 minutes on a low flame.

6. Chicken dum biriyani is ready to serve. Serve it with raita or chicken gravy.
