Pheni is basically a sweet bread which is made out of maida and dips in the sugar syrup. It is easy and deliciously sweet to must try. Pheni has so many layers and sweet texture.

Ingredients for making pheni doe:
1. Maida - 4 cups
2. Salt - a pinch
3. Vanaspati/ ghee/ oil - half cup
4. Egg - 1 / optional
5. Milk - 1 cup
Ingredients for making sugar syrup:
1. Sugar - 2 cup
2. Water - 2 cup
3. Cardamom - 1
Ingredients for frying:
1. Oil - to deep fry

Steps of making pheni doe:
1. In a large mixing bowl add 4 cups of maida, salt and a half cup of vanaspati and mix all these ingredients well. You can either use oil or ghee instead of vanaspati. Am using vanaspati in it.
2. Next, add 1 egg and one cup of milk and knead into a doe. Using egg is optional to you. you can either use it or avoid it, an egg is used so the pheni becomes soft.
3. Rest this doe for at least 2 hours.
4. Meanwhile, make the sugar syrup till the doe is resting. In a pan add 2 cups of sugar and 2 cups of water, boil till the sugar is completely dissolve in the water.
5. And then add cardamom for good flavour. You can adjust the sugar syrup consistency by your choice. If u want the pheni to be so sweet then the sugar syrup should be thick and less sweet than sugar syrup to be watery. Keep aside to cool.
Steps of making pheni:
1. Divide the doe into 7 portions and make medium size balls. Then roll all these balls into the sheet.
2. Make a paste of 3 tsp vanaspati and 1 tsp maida to apply on sheets.
3. Firstly take a sheet and apply evenly vanaspati paste on it. Continue this step for all 7 sheets. And spread the paste evenly on sheets.
4. Then start rolling it and apply all the remaining paste on it and gently roll it.
5. Take this roll and cut its slices with the help of a knife.
6. Then flat the slices and dust it with maida and roll it.

7. Heat the oil in a Kadai for deep fry and fry the pheni from both the side and take it out.
8. Then dip the hot pheni in the cool sugar syrup for one minute and take it out.
9. Pheni is ready to serve. You can make it and store for 2 to 3 days.
