This recipe is very close to my heart as I always make it once in a weekend. And trust me its a guaranteed yummy beef biryani recipe ever. Ingredients for making beef dum biryani:
1. Beef - half kg
2. Rice - 1/3 kg
3. Onion - 3 large size
4. Tomato - 2 large size
5. Oil - 2 spoon
6. Ginger and garlic paste - 2 tsp
7. Cinnamon - 1 stick
8. Cloves - 12 nos
9. Cardamom - 5 nos
10. Coriander leaves - 1 cup chopped
11. Mint leaves - half cup
12. Brown onion - half cup

Steps of making beef gravy for biryani :
1. First, wash the half kg beef in 2 to 3 water and cut it into medium size pieces. Next in a pressure cooker cook it for 5 to 6 whistles by adding half onion chopped finely, salt to taste, half tsp haldi and 3 cups of water. Lid the pressure cooker and cook till it becomes soft for 5 to 6 whistles.
2. Next, in a small jar add half onion sliced, half tomato sliced,1 garlic peeled, 3tsp chopped ginger, one stick of cinnamon, 12 nos of cloves, 3 cardamom and coriander leaves. By adding little water grind it into a smooth mixture. You can even use the fresh ginger and garlic in grinding process or else you can use 2 tsp of ginger and garlic paste while sauteing the onion.
Steps of fried golden brown onion:
1. In a cooker, add 2 spoons of oil and let it be hot. Saute 1 thinly sliced onion in hot oil.
2. When the onion turns golden brown in colour and crispy take it out in a plate. Then in a pan add 1 spoon of oil and add one sliced onion to make it golden brown to use in biryani while layering
3. Then in the same pan in which you have fried the onion add 1 spoon oil and add the remaining onion left after frying it and saute the onion till it becomes translucent.
4. When the onion is translucent add the boiled and cook beef in it and add the ground mixture in it. Cook for 10 minutes on a low flame so the beef is coated in the mixture.
5. Then in the same water in which we have boiled the beef. Add the rice which is washed for 2 to 3 times, salt to taste, half stick of cinnamon, 2 cardamom and 4 cloves. Pressure cook rice for 2 whistles so the rice will cook.
6. Then after 10 minutes when the beef is cooked in masala add 3 tsp chilli powder and half tsp Haldi and mix it well. Then add 2 tomatoes chopped, one cup of coriander leaves and a half cup of mint leaves and mix it well cook for 2 minutes.
7. Further, add a half cup of curd and mix it well or else curd will spoil. Then check the salt and add to your taste and cook the beef gravy for 10 minutes.
Steps of making layers of beef dum biryani:
1. First in a large vessel add the thick layer of rice, half of the cooked beef gravy and half of the brown onion.
2. Then follow the same and in last add all the remaining rice and brown onion. Seal it and cook in the dum process.
3. For dum procedure, For cooking this, heat an old Tawa place the biryani pot and dum cook for 20 to 25 minutes on a low flame.
4. Once the biryani is cooked well in dum procedure give it a good mix so all the masala and rice combine together.
5. Serve it hot by side of lemon and cucumber raita.
